They can't be dimmed?  They can have their input voltage changed or be pulsed.  Try taking a common LED and putting it on a 3V source (dimmer), a 5V source (brighter) and a 12V source (explosion hazard) sometime.

For those new to electronics I do advise the 12V experiment, just be certain that you have an effective blast shield around it, are wearing glasses, you know standard experimental controls.

Now take a fancy controller and see how they love pulse width controls.

I'm not saying these are good ideas or that they are consistent with a long lifespan, but they are all effective dimming methods.

Of course they can be dimmed, check out the Wii :P.
