Can I have both volumes 1 and 2 show up on the mac with AFP?

Indeed. Why do you ask?
PS maybe you rely on simply connecting directly from Finder sidebar. But as soon as you connect via AFP (Finder > Connect to Server... > afp://yourNASip/), you will be presented with list of shares. You need to share both of them on the NAS, obviously.
