Title: Are specific broadcast channels better than others?

I have nearby networks broadcasting on channels 1, 6, and 11. Is there a problem setting my 655 to broadcast on channel 7, 8, etc. or must they be set on 1, 6, or 11?

No, you can use all channels. The only thing is that 1,6 & 11 are the only channels on the scale that do not overlap with other channels (the other ones). But better choose the ones that are not occupied or occupied by neighbors.
