What I did was not stress about it and  just put 1-65535 for each TCP and UDP.

Yea, that is wrong. If you forward all your ports to 1 PC, how can other devices on your network get any traffic? Not to mention it the major security risk. Might as well just put the PC in the router's DMZ.

For any XBL ports, I recommend narrowing down the global port values to 3070-3080 if you have multiple consoles. 3074 can't be used in a single game console configuration. Ports 53, 80, 88 and 443 are not needed in router configurations as most devices can gain access to these ports automatically and and as needed on there own with out any router help. Usually upnp helps this.

For ping issues, I presume that port configurations is not the area that needs to be looked at. Other devices, ISP service or wireless configurations needs to be reviewed. I would turn OFF ALL wireless and wired devices accept for the devices that being tested and check for ping times and such. Ensure that the ISP service is good by checking ping times directly connected to the ISP modem/ONT. Ensure LAN cabling is good and CAT6 is recommended.

You might install v1.09 FW and test as well.
